What is a Cloud Kitchen?

A cloud kitchen (also called ghost kitchen or dark kitchen) is a food production facility that operates delivery-only — no dine-in, no walk-in customers. Orders come through delivery apps (Swiggy, Zomato) or direct ordering channels. Cloud kitchens have lower setup costs than traditional restaurants because they do not need a prime location, dining furniture, or front-of-house staff.

Step 1: Licenses and Registrations Required

To legally operate a cloud kitchen in India, you need:

  • FSSAI License — Food Safety and Standards Authority of India registration (mandatory)
  • GST Registration — required if annual turnover exceeds ₹20 lakhs
  • Trade License — from your local municipal corporation
  • Fire Safety NOC — from the local fire department
  • Shops and Establishment Act registration — from the state labour department
  • Pollution Control Board NOC — if your kitchen generates significant waste

Step 2: Kitchen Setup and Equipment

Cloud kitchen setup costs in India range from ₹5 lakhs to ₹25 lakhs depending on size and cuisine. Key equipment: commercial range/burners, refrigeration (cold storage and freezer), prep tables and storage, exhaust and ventilation system, packaging station, and a tablet or screen for order management. Shared cloud kitchen spaces (available in major cities) can reduce setup costs significantly.

Step 3: Choose Your Brands and Menu

Most successful cloud kitchens run 2–5 brands from one kitchen to maximize revenue per square foot. Choose brands that share ingredients to reduce procurement complexity. For example: a North Indian brand and a biryani brand both use similar base ingredients. Keep each brand's menu focused — 15–25 items is optimal for delivery. Too many items increases complexity and reduces quality consistency.

Step 4: Set Up Your Operations Software

Cloud kitchen operations require software for order management, kitchen display, inventory tracking, and GST billing. FrontPe covers all of this in one platform:

  • Order management dashboard — all orders in one place
  • Kitchen Display System (KDS) — orders routed to kitchen screen instantly
  • Inventory management — ingredient tracking with auto-consumption per order
  • GST billing — compliant invoices for every order
  • Analytics — revenue per brand, cost per order, profitability analysis

Step 5: List on Delivery Platforms and Go Live

Register your cloud kitchen brands on Swiggy and Zomato. The onboarding process takes 7–14 days and requires your FSSAI license, GST certificate, bank account details, and menu with photos. While waiting for aggregator approval, set up your direct ordering channel on FrontPe — a QR menu link you can share on WhatsApp and Instagram for zero-commission direct orders.

Step 6: Track Performance and Optimise

Once live, use FrontPe's AI daily reports to track which brands and items are performing. Review revenue per brand weekly, identify slow-moving items to remove or replace, monitor ingredient costs to maintain margins, and use the 7-day sales forecast to plan procurement. Most cloud kitchens reach profitability within 6–12 months with disciplined operations management.
